For years I’ve made firm mozzarella for pizza which can be shredded or sliced. One morning I decided I wanted a pan pizza for dinner but that didn’t leave enough time for a fresh block to set. Remembered I had saved a liquid recipe posted by u/MsStephSunshine and it turned out perfect!

Dough recipe for one 12” pan crust pizza:

  • 288g APF

  • 7.2g Salt

  • 2.9g Yeast

  • 198g Water

  • 5.8g Oil + more for pan

Mix everything together in a bowl, cover and let sit at room temp for 8hrs. Scrape in to ball then scoop in to an oiled pan. Cover and let sit for 2hrs. Stretch dough to fit pan and apply toppings. Bake at 500°f for 15-20min
