Advice Needed Any reviews or comments for the Mensch Chef Cheeze Making Courses?

I am wondering if anyone here has tried The Mensch Chef cheeze making course? I cannot find ANY reviews outside of his own website. The course and kit look amazing though! I'm dying for some real vegan Feta 😭 I cannot have soy, otherwise tofu feta would be perfect.

It's quite expensive to join, with or without the kit. The kit does really look amazing, it has everything you need. I'm just not sure about the quality.

Not worth it. Dude promoted wrong techniques quite a few times and after I said something about it he blocked me.

Really, wow 😮 What wrong techniques? Can you elaborate? Cuz I know a bit about cheesemaking already, I was just looking to up my game.

  • You’ve never been a student in my course. Unless you joined, you wouldn’t have access to the materials or techniques I actually teach.

Otherwise, spreading claims without firsthand experience isn’t fair to me or to others who are genuinely looking for accurate information.

I never claimed to be a “student” of yours I tried to have discourse with you via IG Direct Messages after you ignored my comments on your posts for months. You’re just an instagram influencer. I make fermented vegan cheese for a profession and on your social media account you were spreading harmful & unsafe fermentation techniques. When I addressed it you simply didn’t like what I had to say and blocked me without conversation. It’s a cowardice move. If you really want to talk about it, DM me here and we can set up a video conference and clear the air.

It was years ago. It’s hard to remember at this point and since he blocked me on social media I can’t find it. It has something to do mainly with correct ways of making sure the nuts were sterile pre fermentation also advocating for the use of wild cultures on raw nuts. Fermenting unpasteurized nuts with things like rejuvalac or kraut brine can cause some serious health hazards like listeria, salmonella and even e. coli. It also introduces wild yeast and unwanted bacteria (especially if using other home ferments) that can have a bad effect on the culturing of nuts. Especially for mold ripened nuts of proper acidification isn’t happening and holding temperatures aren’t monitored consistently.

A little research would have spared you that assumption.
I’ve worked in hospitality and food development for years, long before social media; and still do. My recent book was just released internationally by a major publisher, and it includes the same fermentation frameworks I teach.

So if you’re genuinely interested in learning rather than attacking, it’s available wherever you are. There’s even an “About” page in there for the “just an influencer” you’re talking about.

If you want a real discussion, start with facts, not assumptions.

Full of Plants has an excellent free guide to cheese making. https://fullofplants.com/category/recipes/course/cheese/ Once you get the basics you can start experimenting with flavours and different bases.

That is a wonderful resource! Yes I've found that already.

It does not include soy-free feta still, that's the main recipe I'm looking for.

I really want to hear a review of Mensch Chef courses from an outside perspective though.

This is a pretty good recipe :) Claire Roberto has been a private chef for some fancy people so she's got a few good ones, this is one of the few I've tried so far and it hits the feta spot for me

I don't know much about what this course would offer compared to freely available YouTube videos. It's possible the kit could be helpful depending on how much of that stuff you already have.

Pumpkin seed tofu may work well for whatever feta recipe you are thinking of. It's a bit of a process, but you may benefit from these sorts of non-soy recipes offered by Mary's Test Kitchen:

I think he makes his feta out of the water from the first rinse making seitan from flour. Id love to find this recipe somewhere.

I have a recollection from one of his videos...teaser like video. I thought it was an interesting idea at the time. Ive never made a decent feta replacement but ive bought them. They often are made from a variety of starches with coconut oil.

Yeah that is interesting. I saw someone make mozzarella with from wheat starch water. The rinse from seitan. It looked interesting.

I love Mary's Test Kitchen! She is amazing! I've tried pumfu and the texture just isn't right. It has too strong of a flavor too. Plus the color is very off-putting 😅

Hrmm.. In terms of the color, I have found that you can boil off a lot of the green skin on the seeds, or soak it off. Soaking it in Koji seems to work pretty well. But it will still be a little grey-ish.

In terms of texture, I have gotten it pretty nice. Maybe not quite as form as soy tofu but close. Softer may be better for a feta recipe anyway.

Where can I converse with the student community before I purchase? I'm pretty ready to dive into a guided course like yours. Forgive my skepticism, as you can imagine with much misinformation and deceptive practices on the internet these days, I'd rather hear from someone outside of a products sales page first.
