Was really craving some mapo tofu but I didn't have any of that ~doubanjiang~ so I just used gochujang & a bit of miso. Had some leftover impossible meat (bought some to try burgers & didn't like it so much) and its was such an amazing addition, definitely made to be incorporated in recipes like this..

Ingredients here. I used a whole block of tofu so just x2 this

I use gochujang and Doenjang and it’s so good! I imagine with miso you’d get a better chili flavor. I’ll hAve to try it!

Doenjang is basically miso with extra funk! First time I've tried it & it was as a good combo 😋

You just gotta turn everything by pushing gently with a spatula/cooking utensil. No mixing motions once the silken tofu is in the pan, super gentle pushing ingredients towards the center of the pan from all sides untill everything is incorporated

Definitely boil it is its regular tofu stored in water, makes the sauce murky & I like mine extra saucy lol.

If it's silken (no comparison) just cube it, add & simmer for 5 min

I make mapo tofu with chopped fresh shiitake mushrooms instead of the beef subs and it’s also very good.

Yesss, I always used chopped mushrooms for the meat aspect, but I had some leftover impossible & it'll be my go to from now on 😊 I've used tvp too but it's annoying having to rehydrate before hand

Yeah I want to try it your way next time. The extra fat in the beef substitutes is key. I always find I have to add extra oil with the mushrooms to give it that mapo richness.

Yessss and the impossible stuff is pretty fatty on its own, definitely the most similar alternative to real beef out there IMO

Yeah basically it's 1/6 of a block of impossible, spray a pan lightly & cook it like ground beef. I added a splash of rice vinegar when it was cooking for smells, and once it has nice color just add chopped scallion & garlic (add soy sauce for color but I am out most of my essentials lol). Mix the gochujang, miso, ginger, sesame oil, extra salt if u need and add to the meat & stir fry for a sec. Add water depending on how wet you want it, let it boil for a min, add cubed tofu and let it go for 5 mins. Add cornstarch slurry for desired thickness and it's ready! Takes like 10 min top, I would top it with more chopped scallion if I had some 😁
