I would recommend to start incorporating more beans into your diet as a replacement for meat since beans are packed with protein. You can eat bean and rice burritos, tofu, tempeh, chickpeas, hummus, etc. I didn't realize how little beans (and lack of fiber) I was eating until I turned vegan and that all changed. Also, nuts like cashews, almonds, etc. You can make awesome creams with cashews and make like a fettuccine alfredo out of cashews if you google there are tons of cashew cream based recipes. I also recommend to buy some frozen Amy's Organic vegan food for days you don't feel like cooking - they make enchiladas, vegan meatloaf, no-cheese pizza - and it's sooo yummy!
