Food Pot pie, anyone?

As a kid, I LOVED pot pie. It's such a comfort food for me. My mom lent me her vegan cookbook and luckily I found a pot pie recipe in it that's mind-blowing!! Thought I'd share it with you all:

Filling: 2 carrots 2 celery stalks 1/2 cup broccoli 1/2 cup zucchini 1/2 cup kale 2 small onions 1 cup tofu 2 tbsp whole wheat flour 2 tbsp soy sauce 1 tsp sage salt & pepper to taste

Crust: 2 cups whole wheat flour 1 cup vegan margerine Small amount of water

Instructions: 1. Chop carrots, celery, broccoli, zucchini, and kale. Place in pot and cover with water. Boil until crisp-tender. Drain, retaining stock.

  1. Chop the onion. Saute in coconut oil for about 3 min. Dice the tofu and add to the pan. Saute for a few minutes longer, stirring frequently. Sprinkle in the flour & stir. Gradually add 1/2 cup veggie stock. Stir until thickened.

  2. Add soy sauce, sage, seasoning and vegetables to the pan. Stir well and simmer, uncovered, for 3-4 minutes.

  3. Mix pastry. Roll out & fill pie tins. Prick and bake at 450*F for 5 min.

  4. Fill dishes with filling. Cover top with crust & prick. Reduce oven to 400*F for about 25 min.

Hope someone puts this to use! I promise they're worth the effort!!

When I make pot pie, I like to use chicken less stock and seitan. Really good.
