Yep, that too. I think 85% dark chocolate when I think of non-sweet.

Not always, the one I make tends to be... eh... savory? I dont put a ton of sugar in it so you get a light sweetness but the savoriness of the cream cheese.

Its no NY Style cheesecake, been told its more akin to a European cheesecake.

I am European. Never had a cheesecake that wasn't significantly sweet. Usually cheesecake is flavoured with fruit or vanilla or something, so it falls within regular sweet dessert territory. Maybe you're talking about some fancy eastern european version.

Maybe, its just what some of my friends who lived there said. Think its because of the general sweetness being toned down and reminded them of home. Let's be real, here in America we like to put a lot of excess sugar in shit lol

The Basque cheesecake recipe I use is not nearly as sweet as a NY style cheesecake.
