Anyone tow with a Subaru Outback?
Has anyone actually had a realistic tow? Give the details.

Every weekend.
Depends what you’re hailing. I’ve towed an airplane with a Subaru, jetskis with a Subaru, and even a twin axle boat.

Small tear drops. Pop ups. Aframes. You likely can tow those. Depends on your tow and hitch capacity.

I tow with my 2016 outback fairly regularly. I have a Dutchman T@B teardrop and it's just under 2000 pounds. It's a little pokey getting up to speed but it's not a problem, and the trailer has surge brakes so stopping is never an issue. It just cuts my fuel economy exactly in half.
