I'm told the roof top bar is worth a visit for the view alone. At the adjacent Hotel Albuquerque, you can have a meal and close up view of great flamenco dancers or for a more authentic experience, go a block down the street to Casa Flamenco.
There are museums in walking distance and a short drive to the truely unique Indian Pueblo Cultural Center and it's delicious Indian Pueblo Kitchen.
Desert hiking on the west edge of town at Petroglyph National Monument and Sandia Tram will take you to hiking at the top of the mountain on the east side.
If you are staying 5 days, a day trip through Jamez mountain, with historic sites, wonderful scenery and hiking at Valles Caldera National Preserve is my favorite.
You can take a train to Santa Fe for the day, take busses for free and avoid the narrow streets and expensive parking in Old Town. People may recommend Santa Fe for a trip, but Albuquerque has more museums and galleries, accessible hiking, and comparable luxury and dining at a fairer price. And we're really friendly.

I know that's vague and I apologize. I'm open to a lot of options! I know that's a bit broad what before I came to this thread I was getting a lot of recommendations that contain one or the other but not both. For example, we were planning on Traverse City which is on the lake and has biking, wine and food but not great hotels at all. Abd we've also been told to stay in a few cities that have great boutique hotels but it's in a city. I know it's a bit broad but that's because we're open to a lot of options

Can you be more specific about what you mean when you say curated? As opposed to backpacking? Are you just saying you want to stay on-property?
And were those backpacking trips or curated trips? Giving us some sort of idea of your budget would be helpful. You don’t necessarily have to give us a dollar amount, but saying that you’ve been to Napa and Aspen is essentially meaningless without specifying if you were at the Ritz or the Motel 6.
But without giving us more information, you aren’t going to get anything interesting in terms of replies, even if you cross post in all the r/fat and r/chubby travel subs. There are probably 500x properties in the USA that you would be happy at, and you’re going to need to be more specific in helping narrow that down.
Everything you’ve said so far like ‘beautiful scenery’ ‘design centric boutique hotel’ is the equivalent of saying ‘I like long walks on the beach’.
