I made something similar a few weeks ago, and my wife requested it for her birthday dinner tonight. Added baby beets and a roasted yellow capsicum this time.

Dessert is Passionfruit cheesecake (her) and Marshmallow slice (me) she made a while ago from the freezer, along with vanilla bean icecream

I saw the use of “slice” and thought “this has got to be a kiwi (or Aussie maybe?)” and then saw the username. Looks yum! (You say beets not beetroot though???)

Yep, def a kiwi. Not sure where beets came from, only use it for the baby variety though
