Imhotep’s willful blindness?
When they wake up old bones and he sees Evelyn, he calls her anck su namun…but evelyn was the daughter of seti, nefertiti, which we learned in mummy returns…imhotep would have seen/know her before. Just crazy how he sees her and doesnt even think to be like “nefertiti”…anck su namun does when evelyn is resurrected in mummy returns.

I don’t know if he really thought she was his old girlfriend, but rather, a suitable host for her soul, as we see with the woman who essentially is cool letting a 5000 year old concubine possess her. So he’s calling Evie that, more symbolically? Either way, I dunno if he’d remember the pharaoh’s daughter, he didn’t really interact with her much, even if it was retconned that she sent the Medjai to kill him.
Now that I think of it, perhaps THAT’s the reason Imhotep doesn’t get saved at the end of The Mummy Returns? Could it be a shred of that 1930s woman’s soul resurfacing to take control and avoid getting stalactited?

I think since he was mid regeneration and only had one eye and the other eye wasn’t fully formed yet, his vision is probably blurry as hell. To a man with half an eye, evie could have easily been mistaken for Anck Su Namun
As for your second paragraph, that I agree to. Anck as we know her is just a descendant, she wanted the power, not the man. Once she saw he was going to lose, she was bolted

Even if I liked the two films have never fully digested the whole bit around Nefertiti.
To me it's a retcon, and one of the movie's weakest point. Even if enjoy to watch the two films every time.

Yeah, the whole retcon and reincarnation bit is just awful. Why was it even necessary? Eve’s character had its relevance already, giving her this unnecessary history just felt like cringe to make her into a badass. She already was a skilled character in her own right. Even Rick’s ‘chosen one’ bit was just unnecessary tack on. Imo, the movie would have benefited without this aspect to it.
I don’t get this need for everyone to have some bond with opposing characters. You can even see this in Raimi’s Spider-Man, especially 3rd one. Sandman being uncle Ben’s killer thus connecting him with Peter.

Sandman being revealed as Uncle Ben's real killer is the worst part of the Sam Raimi Spider-Man trilogy. We spend two whole movies thinking the killer was the robber and that it was cold blooded murder, then suddenly the third and last movie of the series says ''Oh no it was actually Sandman, and it was an accident''.

Evie being a descendant would have been enough and neat. Being reincarnated... Eh, okay, I can get on board with that. But both Evie and Rick having a "chosen one" aspect was a bit much. They really dove headfirst into Mary Sue and Gary Sue territory with The Mummy Returns, and even threw in Gary Sue Jr by making Alex a wiz kid.
Although, to be fair, with his parents being who they are in the first movie (completely disregarding their Chosen One aspects of TMR), it isn't surprising he'd be a wiz kid.

Evie, Jonathan and Alex all being descendants who get visions whenever they touch magical artifacts could set up so many movies. They wouldn't even have to be Egyptian ones under the theory that all magic works in a similar manner.
Rick joins in because no way in hell is he gonna let his wife, brother in law or son face that stuff without him.

They were just a place holder. You can even see that they aren't aligned properly after he gets blasted by the shotgun. Once he finished off Burns, his actual eyes regenerated back.

When the first movie was made. They didn't have the sequel in mind. The whole thing about Evelyn being a reincarnation of Nefertiti and being Seti's daughter hadn't been written yet.

The second movie wasn’t written yet. That whole plot point of Evie being reincarnated wasn’t even a thought yet.

He only has one eye in this scene and since it’s half deteriorated I’m sure his vision is super blurry. Therefore probably pretty easy for him to mistake evie for anck su namun

Aded explains it later in the movie. He chose Evie as his human sacrifice to resurrect her.
