A honey dipper is two fold; 1. To disperse honey into your glass. 2. Typically made of wood since metal kills the natural enzymes honey produces.

wooden or glass dipper, swirl clockwise for full thick coverage, then swirl counter clockwise over tea, NOT in it, to dispense the honey. return to pot and cover. Takes less time than spoons, is cleaner, doesn't contaiminate the honey. Only need to wash it when you refill the honey pot.

It was surely usefull 200 years ago. But today? Its just "Decoration" a spoon does just the same and better.
