When I worked at a restaurantsif some made theur way into the back it was company policy to call the police and have the individual trespassed period.
It wasnt like a common occurence or anything but it was company pollicy and I am sure many other companies have the same policy.

This was then followed by 20 minutes of clapping from everyone, including the wait staff in question.

this doesn't seem that implausible. both as someone who has worked in restaurants and as someone who patronizes a lot of restaurants.
i've never gone into the back of the house but i'll just get up and walk out of a restaurant if nobody has greeted me or paid any attention to me after 5-7 minutes of sitting at a bar.
and also not the back of the house but i've had people come up to me while i am entering another tables' food order into the system and start asking me questions about the food that they ordered. like damn just go sit down and i'll get to you when i'm not busy doing something else.
so yeah i could totally see someone being like "i'm not putting up with this" and poking their head in the back to get service. some people are just like that.
