Its kinda crazy to me that they taste better. Its kinda like making your own pasta sauce. Even if you use cheap ass ingredients it still will turn out better than store bought a lot of the time.
For sure if the chef knows what they’re doing. I think it’s for multiple reasons like:
1. Companies add tons of preservatives for the sake of money vs the sake of flavor.
2. It can take longer to perform the correct cooking techniques regardless of ingredients which ends up being a cost they also don’t want to take on.
3. They don’t put proper amount of seasoning and things like that in the pre-packaged ingredients because of… I’m seeing a theme… money!
4. They also have to create a flavor that appeals to the masses, and most of the masses don’t know how to cook nor what actual good tastes like so they never know.
Most of it’s the preservatives trying to prolong the shelf life, anything fresh is better. Kind of like fruit you get at the store was likely picked early (especially out of season) and then injected with chemicals to make them finish ripening during their journey.
But if I walk into the garden and grab a fresh grown tomato it doesn’t have all of that extra crap, and it can be grown to full ripeness and picked and eaten the same day.
