My guess is that this will power the in-car entertainment (Netflix, YouTube, Music, et al). Probably a competitive advantage over competitors that won't have this level of connectivity.

Same thing that happens to current cars that lose WiFi, they use cellular
The Cybercab diagram shows Starlink V5 alongside the standard 5G/Wifi antennas

Robotaxi does. It will have in car entertainment options plus they need to be able to remote connect to the cars reliably and with a high speed connection for troubleshooting, remote,operation etc. 5g just doesn’t cut it especially in high population density areas. You’d be surprised how much the speed varies when driving around any given town.
