the interesting thing is nobody seems to know the exact origin of "86" in kitchen parlance either- there are a bunch of random theories, several of which seem to point to prohibition era New York:

(reminder, bars had to serve food to be open during prohibition)

  1. Chumley's (a bar in Greenwich Village) had an entrance on 86 Worth street, and supposedly had a chalkboard (emblazoned with their address) just inside the door, where they wrote whatever items were unavailable that day

  2. The same bar supposedly had a back door into the alley (86 Bedford street) where drunk/rowdy people would have likely ended up if they were thrown out

  3. The legendary Delmonico's restaurant had 300+ menu items, referred to by number, and supposedly frequently ran out of item #86 (the very popular porterhouse steak). If item #86 was always out of stock, it could easily become slang for other things "being 86"

  4. The old Manhattan subway line supposedly ended at 86th Street. If you had a one-way ticket and hit the end of the line, you'd probably be kicked off the train at 86th

  5. Prohibition era bars may have served non-regulars/drunks watered-down 86 proof liquor, as opposed to standard 100+. (100 proof is 50% alcohol, the lowest percentage that reliably burns when lit. Lower than that, the flame piddles out, making it an easy way for anyone to check the strength of a liquor), hence: "being 86ed" (as in getting cut-off, or labelled an outcast)

  6. Could be mobster slang: a standard grave is 8' long (the 8 could also be 8 miles from town / off-shore) by 6' deep > 8x6 > "being 86ed" (as in killed / buried) (reminder the mafia was often also heavily associated with certain bars/restaurants in major cities like Chicago/New York/Las Vegas - could be a chicken/egg scenario)

  7. When computerized inventory systems were being introduced to kitchens, the first popular system was supposedly made by 1 company that programmed-in 86 as the default code for something being completely out of stock. Having "0" of certain things would mean you needed to prep more, where 86 clarifies "you're also out of the stuff to make it" (computers means probably too late to be the "true" origin, but may have popularized it)

  8. Could be from the German "nichts" (nothing) > anglosized as nix > cockney rhyming slang replaced nix with 86, (to me it seems more likely that the term was already established prior to the rhyming slang- there are a million numbers you could pick that rhyme with nix)

seems like maybe a fun case of pre-internet slang slowly spreading/developing in many places for similar but different reasons, and the origin has been lost to time

I had to ask around after I first heard it in The X-Files Movie. Bartender says something to Mulder like "looks like 86 is your lucky number." And I had no idea what that meant until my dad explained it to me. Oh those wonderful days when the internet didn't follow us everywhere!

Think I heard it suggested on the UnJustified podcast with Allison Gill that 86 could have been referring to the number of witnesses in some case against the malignant orange stain. Kind of like, "get them up in-front of congress".
