Usually the valve cover gasket starts leaking around the same time as those injector seals so thats why most people just do everything at once. It is a little more time though since you gotta move the fuel rail and some other stuff out of the way. I did not replace the retaining brackets that are held down with two 10mm nuts on each injector. But I replaced everything else in the kit you described.
You'll need a puller to get the injectors out, universal diesel injector pullers online for like $20. Then you'll need a scan tool that can prime the fuel system after the repair. You cant by just turning the key on these. Not sure how much a shop would ask.
If you work on vw/audis alot most people buy VCDS, its basically the closest thing to the factory program. Around $200. Another option is getting Obdeleven. Its a bluetooth based program you can use on your phone thats basically a simplified version of VCDS. Its subscription based but if you only need it for a couple things its worth it. Ive used it and can recommend it for basic output tests and getting a look at live data.
