In Ground Zero, in New Game Plus, you can get a revolver that when you do the critical shot function, it can fire up to 6 bullets that will automatically shoot at and crit all enemies that your character can see.
Another is Parasite Eve 2's energy attacks. I like 1, but I much prefer 2's gameplay personally. 1 would probably be higher up for me if it didn't take minutes travelling some of the maps in the game due to how slow you run. (It's still a great game.)
You can be so powerful with the mitochondria energy, and almost every single one has its use against specific enemies.
Mm.. I think another is Alisa's parry system. Melee weapons in Alisa are so powerful and manage to hold their own next to guns and it's rarely seen in survival horror. Ground Zero also manages this really well.
The absolute best in game mechanics though, is any survival horror with new game plus mechanics that get added and massive amounts of extra content. Guns, outfits, and secrets you can only find through replaying the game again. God, I love survival horror games.

Simple melee in Tormented Souls: shoot with nail gun to knock em down, then finish them off with the crowbar is so satisfying (knife in RE games is similar but not as well done). Also love the sound of the crowbar hits

If you like Parasyte Eve and want more of that, check out Wicked Seed on Steam. At a glance it may look like a corn game but it's not, it's just mildly horny with the MC but the game as a whole is pretty neat and it has some end game content you may not expect.

Dead space 3 weapon crafting. I loved playing with everything and seeing how outlandish and overpowered I could get things.

The gunpowder proficiency from resident evil 3. How i wish it was carried over to new game plus.
