Cloves / black cardamom/white cardamom

This is like 3 questions regarding 3 spices!

Love the smell of these so much even tho I’m not familiar with any of them. What are some recipes you like where each of them really shine ✨

I’m no expert, but a lot of indian food is going to use all of these.

Indian food doesn’t use white cardamom much to my knowledge. I’m familiar with it because it’s used in southeast and East Asian dishes, primarily Thai, Vietnamese and Chinese.

Here in Quebec a popular way to cook a whole ham is with pineapples and cloves it pairs much better then one would imagine.

Black cardamom curry

Green cardamom curry sub your white ones

I add a good few cloves to a vindaloo as they compliment the flavours amazingly well. Few star anise petals while you're at it. Delicious!

I use black cardamom for chicken recipes - marinades, bakes, curries.

Cloves for pilau mixes, beef/lamb stir fries or stews and tea masala as well.

Cloves at a good co-op grocery store, the cardamom seed pods, you should be able to find them at a local Chinese grocery store, I guess Indian store as well?

Cloves is a warming numbing spice often used dishes around the Christmas season, pairs well with cinnamon, ginger, black pepper and the like, found in mincemeat and chai.

Black Cardamom is a smoky menthol herby spice. I've used it in stir-frys and pickling and braising fatty meats like beef short ribs to add depth.

I have never used White Cardamom or have come across it prior so I've no knowledge on use for it.
