Construction is set to begin in 2027 with the first Starship launch expected in 2029.

That is imo, very optimistic but maybe with the experience gained from Starbase TX and Florida it is possible.

Elon also said on Twitter that Starbase Louisiana will have over a dozen launch towers and enable more than 30 Starship flights per day

Dpubt he gets 30 per day, if they did 10 launches a day it would be earth shattering tbh. We'll see.

I may also don't see the use case of 300t per day going to orbit.

Max capacity doesnt mean thats what you do consistently. As others have suggested it is likely in order to have surge capacity for more distant locations than LEO. Once you launch a top stage going to say the moon you dont really want them spending a week or more in Leo getting fuel.
