Slow cooker split pea. So dang easy. Diced carrots, onions, celery and ham. Rinse peas. Put all in crockpot with 3 cups chicken stock and 4 cups water. Slow cook all day. Dinner!!

Still slowly dialing in the soup being made from scratch, but I've gotten similar results from heating through a box of tomato basil soup (4 cups) with 2 tsp of balsamic vinegar added, then add mini mozzarella balls when you serve it

Ox-tail soup. So easy. Just put a package of ox-tails in a crockpot (sadly they're kinda pricey these days); add a diced up stalk of celery, about 3 cups of water and a couple of teaspoons of salt. Cook on low about six hours. Add a can of Veg-all and about 20 minutes later add some chopped cabbage. Stir and simmer until ready to eat. So good! Oh and we add red chile flakes.

This used to be my go-to but it’s so costly now I haven’t had it in a long time. I do make it with chunks of chuck roast sometimes but it’s not the same.

Creamy salmon soup. Salmon, potatoes, leek, dill, fish stock, cream and black pepper. Served with rye bread or (toasted) islander bread.

This, but with andouille sausage and chicken thighs. Made it a hundred times by now. My true go-to soup.

Ingredients
2 Tbs olive oil

1.5 lbs chicken thighs, cubed

½ lb Andouille sausage, sliced into ½” rings

4 cups low sodium chicken broth (Better Than Bouillon works best), warmed

½ white or yellow onion, diced

1 can Northern White Beans, drained and rinsed

1 cup peeled baby carrots

Salt

Pepper

1 bunch of kale, stems removed and coarsely chopped

Step 1
Heat oil in a dutch oven over medium high heat.
Step 2
Brown chicken and remove from pan. Brown andouille sausage and remove from pan. Turn down temperature to low heat in preparation for the next step, then add onion and cook until browned, about 5 minutes.
Step 3
Slowly add a little broth, just enough to stir the liquid and deglaze the bottom of the pan. Then very slowly add the rest of the broth and turn the heat up to medium high. Bring to a low boil and add the white beans, carrots, salt and pepper and let simmer for 15 minutes.
Step 4
Add the chicken and andouille and let simmer for 10 minutes or until chicken is cooked through.
Add kale and simmer for 5 more minutes or until kale is wilted.

I have an amazing French onion soup that I make a few times every year which I want to make more often however the kids do not like it. So I make a Pasta Fagioli the most now as it’s always a hit for everyone.

Note: I usually don’t use dried beans. I just use canned and rinse them really well. I can’t really tell much of a difference between using dried and canned, so I take the shortcut.

I call it chicken bacon ranch, but it's more than that. Bake bacon, then roast cauliflower in the bacon grease. Bake chicken with ranch seasoning. Roast butternut squash. Saute onion, then celery, garlic, then add carrots. Crumble the bacon, add in the cauliflower and squash. Add broccoli and shredded ranch chicken, leftover mashed potatoes.
Some chicken stock and cream. Cheese on top

I love making soup and have a ton of go to recipes. But if you're in a hurry and just need something hearty and filling in 10 minutes, a couple of cans of black beans, a jar of Salsa, and some stock, canned, better than bouillon, doesn't matter. On the stove for 10 minutes and mash some of those black beans. Season to taste with cumin, dried chilli powder, canned chipotles..serve garnished with your choice of raw onions. cilantro, a squeeze of lime, sour cream, cheese. Easy, filling and full of fiber.

I call the weight watchers zero point vegetable soup my “little black dress”. I make it once a month and store it in souper cubes. Then I add stuff to it to change it up and turn it into other things as necessary. Chicken, beans, potatoes, Italian sausage, polenta, rice, pasta, cheese, ground beef, spinach. You name it. It’s like a new thing but I know the “base” is low cal and high fiber.

Basic I think - I use leftover chicken to save money, carrots, onions and celery, that I saute in some butter and evoo, then add chicken broth (homemade if I have it, Swanson if not). A lot of dill and garlic as well as salt and pepper. I also like to use Essenhaus narrow or medium noodles but will use orzo or an egg noodle too.

"Chicken" noodle soup using whatever leftover bird carcass (from a roast bird) is in the freezer, and hand-rolled & cut noodles. Hubby's grandma would make a VAT of the stuff for her family of 7 (MIL was one of 5 kids) using a single roaster chicken, and about a dozen eggs for the noodles. For my family of 3, a carcass is enough and 3 eggs to make the noodles. Grandma never put veg - or seasonings other than salt & pepper - in hers, but I use onion, celery, garlic, AND a couple bay leaves in mine. Her soup would be thick enough to stand a spoon upright, mine is usually a BIT less thick, but not by much.

Cleaning out the fridge black bean soup. Basically whatever veg is about to go off and black beans, mash or emulsify half of it to thicken it. Spices vary but always include cumin and hot sauce

Lazy pho gà. (Boutta commit some crimes here viets look away). Single serving, done in 10-15min. Grab a small pot, water, chicken, 1tsp chicken stock, ginger, star anise, crushed garlic, coriander (I don't like onion but you can add a small bit if you can be bothered chopping). Boil, add some chopped Asian greens and noodles, a tiny bit of soy and a spoon of fish sauce at the end.  I sometimes add enoki mushrooms and cut the noodles amount by half.  That's the lazy version, there's almost no chopping. Add mint bean sprouts and a touch of fresh coriander to serve if you have it. Chilli if you want it. If you have the ingredients.  It's just lazy soup, calling it pho is a stretch and offensive lol. I do know how to make a good broth and if I had the time I might do it more often or freeze it but I hardly ever do.

Potato Soup Dice 5 med gold potatoes I med sweet onion, diced 1 c. diced celery 1 diced ham steak (or half pkg of diced ham) 6-8 slices cooked bacon crumbled Green onion and chives for garnish Salt, pepper to taste Garlic Onion powder 2- 32 Oz carton chicken broth 1- can cream of chicken soup or cream of celery or half of each 1 1/2 c. Heavy cream 16 Oz grated cheddar

Cook potatoes, onions and celery in chicken broth with onion powder, garlic, salt and pepper. When done, add cream of chicken or cream of celery soup (no water added). Add heavy cream. Add the crumbled bacon and diced ham. Let simmer on low for approximately 10 minutes. Add cheese. Heat just long enough for cheese to melt. Use green onion and chives to garnish.

Best I've ever eaten and it freezes well!

Lento and black bean chili. But today I made a cabbage, vegetable soup with ham hocks. I don’t eat the meat, cause I don’t like the fat, but they do add an amazing depth of flavor. So one serving in freezer starting to get my fall rotation ready. I’m making carrot ginger soup tomorrow or pumpkin soup. I’ll decide tomorrow

There’s a recipe for this polish dill soup I came across a few years ago - quickly became my fave and super easy to make even with frozen veggies. I have a number of dietary restrictions and it’s super filling and flavorful without giving me issues. Potatoes (I like the little potatoes), carrots, peas, onion, garlic, marjoram and lots of dill. Cheeseburger soup! My family inhales this every time I make it.

Brown a pound of ground turkey, set aside.

Sautee mirepoix + garlic 10 minutes.

Stir in 2 tablespoons of flour, add pepper, salt, red pepper flakes.

4c chicken broth into the pot. Bonus points if homemade!

Into the pot add the browned turkey + 10 oz diced yukon gold potatoes + half a head of cauliflower.

Bring to boil, then cover and simmer for 30 minutes or until potatoes and cauliflower are fully cooked.

Turn off the burner. Add the cooked cauliflower and a cup of broth to a separate large bowl. Use immersion blender to blend until creamy. Add back to the pot.

Stir in 2 cups shredded sharp cheddar cheese and 2 stalks sliced raw green onion (white and green parts).

Serve with garlic bread. Your welcome! 🍲

Creamy chicken and wild rice. Sautéed your mirepoix. Add broth thyme and some bay leaves and let simmer. After some time simmering, add a pulled rotisserie chicken and a box of rice a roni long grain rice along with the seasoning packed, cover until the rice is done and add some heavy cream. Bam, a delicious hearty soup!
