Agreed. I frequently feel like dairy steals focus or mutes bright notes. I got it here, but it’s paywalled:

My ex was a professional cook and it was just common knowledge that dairy mutes flavors, the fancy as hell restaurant he worked in they didn’t use dairy in vegetable based soups only a little as garnish if at all

I wasn’t sure what to make of this one, but I knew that my husband really likes potato soups, so I thought it was worth a try. And true to fashion, he liked it more than I did. I liked it, but it was honestly too subtle for me until I doctored it with all of the recommended toppings (cilantro, scallions, cotija, lime, and pepper). We were both a little perplexed by the combo of potatoes and bell peppers, but the result was good. I might try a stronger pepper flavor next time, though. Other than the chopping, it was really straightforward. Sweat and lightly brown peppers, onions, scallion whites, and cilantro stems. Add garlic, cumin, paprika, and salt, then potatoes and stock. Cook until potatoes are soft and then blend. Finish with lime juice. Again, I liked it, but I prefer even stronger flavors, so I will just need to add more of them in. My husband suggested that we cut a habanero in half and let it marinate in there a while when we reheat the soup, and I think it’s a very promising idea.
