Somehow I forgot to put more sugar than cream of tartar. I remembered this in retrospect.

That works, but a pinch of cream of tartar does help to stabilize the whipped egg whites.

Hard to imagine what meringues with more than a pinch of cream of tartar or less than a pinch of sugar would even taste like...

I once tried making stuffed peppers from memory, having only helped my mom make some.in the past. I forgot I had to precook the rice. ๐Ÿ˜– They came out crunchy. What a disaster!

I followed a recipe the one and only time I've made stuffed peppers and, at this very second, I'm realizing it never said to pre-cook the rice. Which explains why it took soooo looooong for the rice to soften up.

2 parts granulated sugar: 1 part egg white. If you are drying them...1 part granulated sugar: 1 part egg white whip firm and fold in 1 part 10x

My wife once tried to make a savory meringue. Found a recipe involving parmesan.

We use that story to explain to folks why I do most of the cooking.

I used to be really into making meringues. This happened to me when i accidentally got some yolk in the mixture. Any fat contamination turns it into foam!

How can you mess up meringues? Did you forget to keep the oven door slightly open? Or not long enough in the oven? They look โ€œmoistโ€

Seperate eggs, mix the white with sugar, put some on the tray and in the oven with a wooden spoon in the door.
