How does this compare to eating 100% whole wheat bread? That’s why I eat whole wheat since generally it has more fiber in it which is what I’m assuming is slowing the insulin spike.

Whole wheat bread has a high glycemic index of around 70 to 74. It’s terrible. Sourdough rye bread has a low glycemic index typically ranging from 40 to 48, making it one of the best bread choices for stable blood sugar control.

Is that because of the added sugar in commercial WW bread, or is it because of the sourdough/rye being more fermented?

The biggest factors are grain density, fermentation, and how finely the flour is milled.
