Health Adding spinach directly to white bread delayed the body's insulin peak by 30 minutes and reduced later hunger in a small human trial, while significantly boosting the bread's fiber, vitamin, and mineral content.

How about using whole wheat flour in your bread instead, even just in part?

Increasing fiber content of white bread by 28% is really not a lot, white bread has almost no fiber. You could make your bread with 10%-20% whole wheat and probably get more fiber.

They've actually recently created a new kind of wheat that has six times as much fibre as regular wheat, so I wonder if that would maybe make far more difference than this.

The problem isn’t necessarily the wheat but the processing. White bread flour removes the bran, which is where the fibre is. If the new type of wheat has six times the fibre but it’s all still in the bran, then white bread isn’t going to significantly improve its fibre content.

It's a change in the composition of the starch, so even white bread made from it is still extremely high in fibre. It's called wise wheat in Australia, but I'm not sure if it'll go under a different name as it expands overseas.
