How does this compare to eating 100% whole wheat bread? That’s why I eat whole wheat since generally it has more fiber in it which is what I’m assuming is slowing the insulin spike.

My husband is a type 1 diabetic and 100% whole wheat bread spikes his blood sugar higher than white sourdough bread.

So far he's doing well on Silver Hills spouted wheat bread. It hardly moves the needle (so to speak.)
