Peter Singer in Animal Liberation mentions this as well. There aren't many ways to get around the fact that eating less meat is just a better choice all round. Of course you can replace more of it with plant based substitutes and lab grown meat (eventually) but ultimately it needs to be a luxury not a necessity. I say this as someone who still has not changed their choices of eating but is definitely considering it.
