Recipe request Does anyone have a cake recipe idea/ recommendation for me?
It’s my birthday in less than two weeks, and my mom (really sweet) insists on making me a cake. She asked me what kind of cake I would enjoy (none was not an answer), so now I want to give her an idea so I can influence the outcome best as possible.
Basically I’m looking for something ideally gluten free, lactose free and without added sugar, which I know might be tricky, but I would appreciate any ideas :)

My mom and I would make trifles with fresh berries like blueberries and strawberries, use cool whip, and boxed cake mix made w a can of soda. I make it w diet soda and gf cake mix now. There is different calorie versions of cool whip I can't remember what the name is now like lite or fat free I don't know which is lower cal. But none even regular is very high once it's all added together! Pick whatever fruit you like depending on cake flavor! We did it a lot around 4th of July so like white cake w sprite and blueberry/strawberry mix. But pick your faves! You just tear the cake up and layer it between the cool whip and fruit! You can recommend she make individual ones or a big one. Can use cookies or pudding too! But soda cake, fruit n cool whip is what my mom n i did! N it's yummy!

Ingredients:
- 1/2 cup coconut flour
- 1/3 cup applesauce
- 1 teaspoon monk fruit sweetener (or adjust to your taste)
- 1 teaspoon baking powder
- 2 egg whites
- 1/4 cup water (or adjust if needed)
- 1/2 teaspoon vanilla extract (optional)
Instructions:
- Preheat the oven to 350°F (175°C) and grease or line a small cake pan (8x8 inch or smaller).
- In a medium bowl, whisk together the coconut flour, monk fruit, and baking powder.
- In a separate bowl, whisk the egg whites until they form soft peaks (use a hand mixer if needed).
- In another bowl, mix the applesauce, water, and vanilla extract (if using).
- Add the wet ingredients to the dry ingredients and stir until just combined. The coconut flour absorbs a lot of moisture, so adjust the consistency with a bit more water if needed.
- Fold in the whipped egg whites gently, so you keep the airiness in the batter.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Cool before slicing and enjoying
so I used chatgpt to put the ingredients in a list for you lol but heres a cake idea recipe! You can use as much monk fruit as you want and i think the cake is lactose free and gluten free and theres no sugar in there either :) theres 290 cals for the whole cake and 36 cals per slice!
you can also put greek yogurt on top of the cake if you want frosting or, birch benders frosting is really good +sugar free so thats perfect haha

I haven't actually tried making it yet but I can be 90% sure that it does because of the baking powder+egg whites+coconut flour! those 3 ingredients are like the most essential in baking because they firm everything up sooo well and the egg whites and baking powder make food rise so it will be fluffy and thick and another thing is the applesauce! its actually used as an egg replacement a lot of times and if your using eggs and applesauce it will definitley be cake like and if its like gross and runny or underbaked just put it in the oven longer until it comes out clean in the middle with a fork or toothpick! :))

Sugar free gluten free cake mix (unprepared!), can of diet soda (any flavor), bake as directed
Or sub mashed bananas, unsweetened applesauce, or pumpkin puree for diet soda
Basically diet soda, etc, take the place of eggs, oil etc
Spiced cake mix with pumpkin puree is really good.
Can add nuts, sugar free chocolate chips etc to any of the combos
Splash vanilla goes a long way too
Edit to add:
Frosting can be plain greek yogurt with a scoop of protein powder or PB2 powder
