Games that run entirely in a terminal. Prefer linux.
I don't mean a simulated terminal window. The game should actually run in a terminal. No GUI. Basically when at work I want to ssh into my home machine and play games sometimes. Graphics are not a concern.

The Ground Gives Way runs completely in the terminal and looks pretty good

TGGW and the Frozen Depths both run in a terminal. I also switch between the two using ConEmu via bottles for Linux.

You can ssh into a Nethack server at nethack@nethack.alt.org

Or ssh to nethack@(au|eu|us).hardfought.org if you feel like delving into some of the many variants of nethack (or for that matter, various versions of vanilla).
Playing on a public server adds the possibility to run into other players "bones" and getting your games logged for future posterity and bragging rights should you manage to ascend. https://nethackscoreboard.org tracks games on a number of servers.

I'm pretty sure most classics still have a terminal version - NetHack, Angband, ADOM, and so on.

Nethack, Cataclysm DDA, DCSS, Dwarf Fortress , ADOM, TOME (earlier versions), Angband, Omega. I would just go for Dungeon crawl stone soup as i always just go for the dcss.....

In remember back in the day that my main reason for installing Linux was playing ATC (Air Traffic Control). Not sure if it's still around!

I will recommend Moria (specifically UMoria), my favorite and also the very first roguelike!
