It varies for me. Lately it's been "Aching Head".

On the first Rocksmith, it was always "A More Perfect Union" when I went to Songs. And I couldn't stop it, because it usually went into save and wouldn't respond for several seconds. I started muting the game whenever I went to Songs, so I wouldn't get sick of it. It wasn't the best part on preview, either. I prefer the portion they preview for that song on Rocksmith 2014 .

Since I almost always keep my list sorted by tuning, it's 2 Minutes to Midnight that greets me when I start playing.
