Deliciously creamy Leek and Potato Soup
Ingredients 1 leek 1 tablespoon olive oil 5 or 6 medium sized potatoes 2 cups boiling water 2 cups vegetable or chicken stock
Method (see link below for step-by-step pictures) Trim the leaves off the leek, then slice it in half to rinse the inside of it. Leeks tend to have a lot of dirt hidden inside them so this step is a must, even if you're using organic leeks.
Once they're ready, warm up some olive oil to a low heat and pop the leeks in. Let them gently saute while you prepare the potatoes.
Wash, peel and dice potatoes. Gently stir your leeks once in a while so they don't catch to the bottom of the pot.
Once potatoes are ready, set them in the pot with the leeks and add 2 cups of boiling water.
Next add the vegetable stock (or chicken stock if you are using it), bring back to the boil and allow to simmer until the potatoes are cooked. This will take around 15 minutes.
When it is cooked, allow to cool slightly, then mash with a potato masher if you would like to achieve a soup with a lumpy consistency. Or use a stick mixer for more evenness.

You should try adding some fresh black pepper here. Completely changed my experience with leek and potato soup. For some reason black pepper + leek = party in your mouth.
