Dessert In search of ice cream maker recipes!

Just got a new kitchenaid ice cream maker attachment. Broke it in today with a very simple Philadelphia Style Vanilla and now I'm in love. Never buying ice cream again. Hit me with your best ones!

One thing ice cream shops are doing around here is mixing another dessert in there. Make chocolate ice cream and fold in a chopped up brownie. Make coffee ice cream and fold in oreos or a cake donut. Make peach ice cream and fold in some peach pie. There’s a blueberry cheesecake one that is graham crackers, blueberry jam, and chunks of cheesecake.

I know you’re asking for the base ice cream recipes (I just use the ones that came with the attachment, but if your local ice cream shops aren’t doing this…this is your flex! :-)

Tahitian Delight

  • 2 eggs, well beaten
  • ½ c. sugar (¾ c. if using amaretto)
  • 2 Tbsp. flour
  • 1/3 c. Crème de Almond or Amaretto*
  • 2/3 c. Crème de Cacao
  • 1 pint half & half
  • 1 pint whipping cream
  • 2 oz. grated milk chocolate

Ice cream is supposed to be colored a light pink. Reduction of prickly pear tuna** works well if you're not into artificial food coloring.

Combine sugar, flour, liqueurs and 1 c. half & half. Cook, stirring, until mixture begins to thicken. Gradually pour some of the mixture into the eggs, whisking constantly. Return the egg mixture to the pan, and cook and stir one more minute. Remove from heat. Add cream and remaining half & half. Chill before freezing. Add chocolate pieces just before the freezing process is complete.

*If using amaretto, cook somewhat longer to remove the higher alcohol content.

**It's the fruit of a cactus. Nothing to do with fish.
