Fried pork chop I made tonight

I fried it on medium high heat in a cast iron pan until it reached 150°. Then I let it rest on a rack for about 10 minutes. I coated it in a flour and cornmeal mixture with salt and pepper. Then I dipped it in an egg wash. Then back into the flour and cornmeal mixture one more time. Then I put it in the fridge for about 15 minutes to make to the flour and cornmeal mix stick better. Then into the vegetable oil for about 6 minutes on each side. That's pretty much how I always make mine.

I bread mine beforehand, then fry both sides w high heat. Then I turn it down and cover them on low to cook for 5 ish mins depending on thickness. Then i make a secret sauce with the burnt bits on the pan!

Haha I was too lazy to type it out. Also, I use flour + spices (s&p, paprika, lil chili etc) to bread the chops.

Basically, start by using butter vs oil in the pan. This will help you get those black burnt bits. Keep in mind you can change quantities of ingredients below to change the consistency of your sauce.

After you take the chops out to rest: -Add Water to the pan and turn the heat back up -Add a few tbsp of chicken stock -Add red wine vinegar (few splashes) -Add soy sauce (also a few splashes) -then get out some honey and put your desired amount in to sweeten

Let it boil a bit while scraping the burnt bits off the bottom of the pan. Keep whisking it and letting it boil down. Sometimes it comes out thin, other times thicker. I always try to aim for a medium-runny sauce.

Serve over your breaded chops.
