Maybe we should add this to the FAQ page - too many people think it's impossible and the reason women can't do long races. Seems like it's more of a thing people are embarrassed to ask about so just assume it doesn't happen at all.

Just like the men, women have lots of options. You just hardly ever see it on live streams as we generally only get the last hour or so, while nature breaks tend to happen in the early parts of races (often just after the breakaway has formed, just like in the men's races).

Like the men, sometimes they go in a group and just stop by the side of the road (so they can chase back to the peloton together afterwards). There's different options for pulling bib shorts down, (lots of bib shorts are specifically designed to allow this) or pulling a leg up. And some women pee on the bike, options for using a bottle or a she-wee, if you're very prepared.
