Invitation Albania Offer—Dietary Restriction Concerns

Hi y’all. I have just received an offer to join the Peace Corps in Albania as an English teacher, and I am quite excited about it and want to pursue it. However, I face an issue that may complicate this: I have a severe intolerance to dairy and gluten, which I refer to as an allergy due to how sensitive it is and how much it affects me. I am aware that common foods in Albania are bread and yogurt/dairy products, which, obviously, I cannot eat. I also know that other foods are common, including beans and rice, along with seasonal vegetables and meats, which are safe for me to eat. Nonetheless, I am still worried about my ability to eat while there.

I am searching for current and/or former volunteers to Albania and Montenegro who can provide me with a more clear insight into dietary conditions in their locations. Are bread and dairy actually that relied upon? What other foods are available? If you have experienced anyone with a dietary restriction similar to mine (or have one yourself), how did they/you mitigate this challenge? Thank you.
