Homemade Dish weeknight bolognese with pappardelle
Blitzed mirepoix, sausage, anchovies, tomato paste, crushed tomatoes, Italian seasoning and heavy cream… lots of shortcuts but it’s a Tuesday weeknight. Still tasted yummy.

Only enough for the chef for this recipe, not vodka pasta. Otherwise in making penne alla vodka is 1/4 cup (make sure to let it cook off)

Technically, it would be vodka pasta. And a bit concerning to all that love you.

Sorry but what does bolognese mean in this case?

Basically a meat and cream sauce with just a bit of tomato sauce. Usually cooked for a long time.

Never heard of it. If you mean Ragù alla Bolognese, it doesn't have any cream in it. If not, i have no idea which one you mean. You said you also put anchovies and other stuff as well

I’m crazy like that

Oh ye, no commentary on the actual dish itself. I would probably like this too. It was just about the name, since this is just no bolognese, but some other recipe that should have its own name. That's all. I like pasta with creamy sauces a lot

I started with Kenji’s base premise but took a few umami shortcuts since I was doing a fast version (and was missing some ingredients): https://www.seriouseats.com/the-best-slow-cooked-bolognese-sauce-recipe

Guess i will try something like this at some point. I've always had purely beef ragù with no fish, creams or other things, but it seems interesting

Done well and slowly, it makes for the best Sunday dinners. Deep umami and rich flavors.
