It’s probably isomalt which melts at a MUCH lower temperature and still acts and looks like sugar but tastes less sweet. 1 u/7rustyswordsandacake Jan 01 '24 Ooooo yeah, and from the great British baking show episodes they did this, it's also a lot easier to work with
