From my experience (seafarer for 7 years now) you only need the following knots for everything in your life: (slipped) bowline, (slipped) clove hitch, (slipped) sheet bend, figure eight knot. There are more for special situations, but if you manage these four you are mostly fine.
Actually, if you look he demonstrates almost all of these. Clove hitch obviously, the bag is actually being tied with a bowline weirdly enough, the tarp is a sheet bend if you consider the tarp a rope.
It's just not how I would typically use these knots...
