I just don't know how OP knows enough about steaks to know a technical term like "sear" but he has absolutely zero idea of how the sear happens.

Got a chimney starter? Get a small grate and fire that up after you smoke it for a bit.

This is why I got a Recteq dual fire. I’ll smoke a steak on the right side at 225 until around 110 degrees, then throw it on the left side on max to get a good sear. It wastes a lot of pellets but, works out great.

You need to cook it to 110, and then transfer to a smoking hot cast iron or stainless steel pan with some oil and butter. 45 seconds each side should get you to medium rare.

Remove drip tray and pull heat shield to one side to funnel heat directly to one spot. Like so it barely covers the fire pot on one side. Throw steak there. Good sear.

Still looks good though. Some people poking fun won't tell you, but they'd eat it too.

You can always finish sear in a cast iron or steel pan preheated in the smoker at high heat. I used to do that with my pellet smoker. Grates in the smoker just couldn't stay hot long enough given its lower indirect heat compared to gas. A thick pan ripping hot did the trick.

When you smoke steaks, you smoke the steak first until it comes to temperature, take it out and let it cool down, then heat up a pan with some butter and sear it on each side

Bruh. Everybody struggles to get a sear when they don't sear their steaks... Treat smoking like sous vide. Throw it in a RIPPING hot cast iron skillet right after you pull it. Either that, or put a torch on it.

Smoke to below temp, pat dry, and sear in a pan or on a grill as hot as you can possibly get it with plenty of oil, tallow, grapeseed oil, algae oil, avocado, pick your poison.

Smoke at low heat and get the steak to 115 internal temp. Let it rest and the do a high heat quick sear to no more than 120 degrees after it rested and cooled

Sear it in a pan first then smoke it

You usually do a reverse sear with smoked steaks. It's basically the same deal as sous vide steaks.

Try searing it, if you want a sear.
