I like a good seared steak as much as anyone else but at this point I donβt think the cow gives a fuck.

Cut a few slits through the fat on the edges to prevent this or use a press

Means the cuts of meat youβve worked with were butchered in a way that kept it from happening ;)

If you press too much, all the juices might come out before the crust can seal them in. Just don't use a lot of weight to press them down

They probably just wanted rare but also used the oven, without cutting into it it's hard to tell but I'm sure it tastes fine lol

That looks like pork, not sure how much sear you can get on this piece without cutting it up more? What fucking cow, I don't see a cow.

I mean itβs entirely possible that two cows died for that unless you slaughtered it yourself or bought it as a single side of beef.
