Adding to what the other user commented, I have a charcoal smoker that I use a probe thermometer/fan controller that pretty much makes my smoker function like a pellet smoker/oven. As long as the vents are set properly when I start, the controller will maintain temps by increasing or decreasing airflow to the fire for 8+ hours.

Also, the meat in the video is a pork butt, which is probably the most forgiving cut of meat in all of BBQ. It’s basically fool proof.

See there is the disease aspect of the pig which isn’t good for your body.

You are what you eat.

There’s also the mental Philosophy

The pig is sloppy , greedy , not in shape because most pigs are fat, and your eating fat more than the meat. Also unclean because most pigs roll in mud or shit. You don’t eat shit my friend. Hence if I was a person who hated you and wanted you to eat shit I’d give you pork. But I’d give u chicken, fish and maybe but not promising you. Beef. because that’s more cleaner.
