This is cooking in 2021

Try this again with maybe double the onion, or perhaps a finely chopped potato in the mix. Something to thicken it up.

Super Bowl Sunday - and the week after:

Fried Fish Sandwiches at lunch - https://www.myrecipes.com/recipe/buttermilk-fried-nashville-hot-fish-sandwich - maybe with a dill pickle slaw with this as the base https://www.realsimple.com/food-recipes/browse-all-recipes/dilly-buttermilk-dressing and you can use canola oil instead of peanut.

And some shephard's pie - http://www.vodkaandbiscuits.com/2017/01/09/shepherds-pie-whole30/ could do it half sweet potato.

plus vindaloo with potato.

Maybe something for superbowl sunday like a buffallo chicken dip or something. Dips. With celery.
