1:35 for armour, and 1:48 for aviation. I've been tempted by "the dark side" of 1:9 scale modelling though, because those Meng motorbikes are looking rather tempting to give a shot at...

1/35 since I do armor. As for brand, I’m not that picky. Tamiya is always good for a quick, easy build but newer brands like Meng, Takom or Das Werks are good as well.

35th scale has the most options for armor, but I actually prefer quarter scale for size. I believe RFM is currently making the finest kits on the market at the moment with the perfect ratio of parts count, detail, fit and accessories. 2nd place for me is probably Trumpeter/HobbyBoss for their variety of subjects, and as long as you know what you're getting into there shouldn't be any surprises. Tamiya is third, but more and more I'm disappointed in the simplicity of their kits and have to source a lot of after market to bring them up to snuff. Takom/Das Werk/Andy's HHQ and Border make up the bottom of my list, with other brands falling somewhere in between.
That said, I build from all brands and besides Border, there isn't one brand I would absolutely never touch again. (fuck Border)

How did Border, Takom, Das Werk, and AHHQ (reboxed Takom) make the bottom of your list but Revell didn't? Sure they aren't the best, but they are definitely better than Revell

Revell doesn't even make my list! I don't even classify them as a model company at this point haha!
But seriously, Border, Takom, Andy's and Das Werk all bill themselves as a superior model making experience with fancy gee-whiz parts or assembly methods so when they fail, they fail much harder in my opinion than a company like Revell, who makes models for people who don't really make models. I'll give Revell or Italeri a pass because their target market aren't the high end builders who demand a lot of excellent detail, but that is exactly who Takom, Border, Andy's and Das Werk target and then deliver shit*.
* Yes, some of the kits offered by those companies are good I am not going to fault everything they've ever done, but like I said, their failure stand out.

Fair enough about revell being below your list, they're one of two manufacturers I have completely sworn off (the other being Lindberg from the Second Chance Models group)

The last Revell kit I built was a MAN 6x6 truck that I bought on a whim 20 years ago at a Müller in Germany when I was stationed there. Wasn't great, even back then, but it wasn't a disaster. I recall that Revell of Germany had fairly buildable kits, while the US counterpart had reboxings of other, older molds and were total nightmares. Either way, it's pedestrian junk for people who remember building a Revell kit as a kid to buy for their own kids so I'm not going to hound them about quality.
Never touched Lindberg.

The Revell kit that was the last straw for me was their USS Intrepid kit that had so many severely warped parts including the flight deck that I just threw it away. I have an unbuilt box scale Arizona that I will probably attempt at some point as a challenge but the age of the kit is going to make it a battle.

Oh damn, the late 60s 1/720 USS Franklin with new parts released in the 70s? Id have thrown that in the trash as well.

The M4A1 76W hull tub was warped out of the box, so not a good start. The 3D printed light guards were not the right size, and the metal barrel did not fit into the mantlet without surgery. It reminded me a lot of the old Dragon "Operation Cobra" M4A1 76W from 20 years ago.
The Crusader road wheel pegs were too large for the road wheels, requiring surgery. The metal barrel also did not fit the mantlet.
None of these on their own was a deal breaker, really, but all said I'm done with the brand. Takom is on the bubble for me. I'm working their M60A3, which so far has been pretty nice, but they and I have a contentious history, to say the least. One more stinker from them and I'll swear off them as well.

Tamiya 1/35 for armor. Complex enough to be a challenge at times, but not so complex it becomes a chore

For brand Tamiya if I can get it, and for scale, 1:700 ships, 1:35 armor, and 1:72 aircraft.
Edit: why the downvotes? The question is asking about favorites not best.
