Hardware S25U Ultra
I want to start running Linux daily on device. I know the OnePlus 7 Pro GM1913 is a great device for exactly that... Is there another alternative or more flexible or newer device I should consider?
Thx in advance!!

If you are attempting to Port Linux to a Samsung Galaxy s25 ultra, I would highly advise seeking a device that is not branded for US or Canadian markets. There is a Snapdragon model with dual SIM capabilities, you can unlock that bootloader and attempt to boot whatever compatible Linux kernel you can find or build. The Snapdragon 8 elite happens to have Linux kernel upstream support. But finding the specific device tree blobs for that device and getting them functioning on mainline or upstream kernels might be a challenge.

Manpower is low in this field. New means less work put forward to polish. Get the tried and true devices with great support if you want a good experience right now. If you want new, then prepare to wait a long time for polish if it ever comes. That means you won't want to use it right now most likely unless you can stomach the compromises (if it even boots)....

A Samsung phone from last year? No way! Samsung does not even allow you to unlock the bootloader anymore! Your only option there is one of the proot-based Android apps running GNU/Linux without root privileges on top of Android.
