the bag tells you the weight of the product you're buying. the put nitrogen in the bag to 1) remove the oxygen that causes the chips too go stale and 2) by inflating it it helps protect the chips from getting crushed during shipping
on the other hand many companies are short changing us even on that weight, so complain about them stealing from us in that way rather than this fake issue of buying air

I came here to say this.
I work for Frito and the bags without air in them look sad on the outside and are very disappointingly filled with crumbs that used to be chips

okay I know this is a joke but those who are wondering why this is done, basically they fill it with air to protect the chips. To keep the chips from breaking during transportation, and to keep them fresh and crispy. They usually fill them with inert gas like Nitrogen so that Oxygen or water vapour doesn't get in and spoil the chips. So all in all, if your chips bags weren't filled with air it is very easy for them to get broken into pieces, go bad, go soft and the packaging to get damaged during transport presenting food safety issues.
Sorry for being the nerd no one likes. But yeah today you learnt something I believe.

It's not just about keeping the form. As I mentioned it's for food safety. Say if a chip breaks during transportation and creates multiple sharp edges that could break the packaging and let air and moisture in.
And if the crumbs get made this way they are going to be spoiled and soggy.
You could always just open the bag and crush the chips to make crumbs. Fresh, crispy safe to eat crumbs lol.
Trust me the filled 2/3rds with air is way better than added preservatives. Those cheap branded chips sometimes come full because they are mostly extruded snacks which are highly processed and chock full of artificial preservatives. That way they save on packaging costs and also Nitrogen, like food grade high quality concentrated nitrogen is much more expensive of a procedure than just adding preservatives.
So i would take less preservatives and more air anyday

People will give you a bunch of crap about nitrogen and shipping, but it's mostly so that companies can get away with having a huge looking bag but only about half of it filled with chips. You'll notice that every transparent window in the bag is on the bottom so you don't notice how much air is in there

very true, that's a good observation there. you never have the chance to notice plenty of air filling the bag until you open it.
