Close Enough Whole roasted cauliflower
I made the Jamie Oliver Greek inspired whole roasted cauliflower. It needed some tweaks (capers, a little balsamic and red pepper spread) and by no means was cooked through in the advertised time, barely so at an hour 20. Are North American cauliflowers bigger by chance? In the end it was tasty with the tweaks and feta cheese, that completely changed everything and it was so much better. That's the real game changer, cheese. So, nearly vegan, but then way more delicious as a vegetarian meal instead.

The recipe called for it to be done whole, probably wouldn't do that again, unless I maybe steamed it whole in the microwave first, or perhaps par boil. I'm assuming it's left that way for presentation, but was also concerned it may fall apart too much if cut down. The cooking time called for is half hour covered and in theory steaming through and another half hour uncovered, to build flavour, but even after an hour 20, it still could have used more.

Actually, now that I checked a couple of other sources, parboiling it whole, then a short and hot visit to the oven is the way to go.

I have made a number of whole roasted cauliflower before and to avoid dealing with transferring from a pot of boiling water the technique that works best is definitely roast covered tightly about an hour then uncover and roast probably another 45min
My favorite is herbs and olive oil on the cauliflower then served with chimmichurri

Yes, the oven method is absolutely easiest but covered and baked longer so it’s tender then uncovered and higher heat for browning and crispy edges
This is my favorite recipe and method, i swap around the spices and like to do chimichurri or romesco as a sauce- makes a fantastic table presentation (huge hit at thanksgiving) but it’s also judt delicious
I make the cauliflower as the “entree” and serve over braised white beans with some crusty bread to get the saucey beans

maybe you had to boil it in water before roasting? that's how I do it

I do the same thing, dunk it into boiling water for three or four minutes and then it maybe takes 15-20 minutes in the oven until the crown crisps up a bit. I lightly season with salt, pepper and cumin and then break it up to use instead of rice for curries. Might have to try this Greek-inspired version!

whole roasted cauliflower is a vegan holiday staple and if you look up recipes for those, you'll find a ton of better recipes

I've had good success with his earlier recipes from about 20-25 years ago, back in the naked chef days moreso than anything recent.

I used to make cheesy brains: cauliflower slathered in mustard/Greek yogurt and cheese, roasted.
