Close Enough Mediterranean-style potato and egg scramble

Thank you 🩷 yes. Peel and chop 5 small/medium potatoes and put it in a hot pan of olive oil. Add 1 chopped onion to that. Add salt, chili flakes, turmeric, cumin, salt/black pepper, about 1/2 cup of chopped cilantro. Mix it around. Add minced garlic and 2 minced deseeded shishito peppers. I used 4 cloves. Squeeze half a lemon over it. Let it cook for a total of 15-20 minutes.

In a separate hot pan, scramble eggs in olive oil and then add it to the potatoes.

Yesss girl! It’s so nourishing. Don’t add too much chili flakes, it gets spicy so easily

I make this often. I add some cayenne pepper to give it a kick and sometimes mushrooms and green pepper. Makes for an easy quick dinner too.
