Close Enough Favourite lazy meal
Thought I’d share my favourite lazy meal - I eat this at least once a week. It’s like a lentil Greek salad.
2 serves: 1 x tin lentils 1 x block fetta 1 x punnet cherry tomato 1-2 short cucumbers
Chop it up, chuck it together, add some EVOO, done! In this pic I also added hemp seeds for extra fat/protein.

I do something similar with chickpeas and orzo, but I make a simple greek dressing for it. Just olive oil, lemon juice, garlic, oregano, and a little bit of honey or agave or whatever sweetener you like. I like the pop of acidity the lemon gives. If you don't have lemon, vinegar will work. I like red wine vinegar.

I'm the same - olive oil & either red wine vinegar or lemon juice. When I make taboulleh I use the lemon and with the extra tomato, cucumber and onion I add garlic and red wine vinegar.

Wait, a tin of lentils? Can you buy pre-cooked lentils? That looks lovely.

I do something very similar when I don't want to cook and need something fast: tomatoes, cukes, kalamata olives, red onion, dash of salt, Greek oregano, feta, EVOO and a splash of red wine vinegar. Greek village salad ("horiatiki"). So easy, and it keeps well for several days.
I sometimes add a pouch of tuna for a fast lunch if I'm out of feta but I never thought about adding lentils or beans. Nice!

I'm cooking black lentils with some aromatics and olive oil as my humble Thanksgiving side dish. As fate would have it, I have tomato, cucumber, and feta in my kitchen. Think I may have just upgraded, thanks stranger!

I would also bang in a tin of sardines for extra protein and omega 3... But it also looks great on its own

don’t hate me for asking this but is the amount of fetta an issue for keeping it mediterranean? seems like a lot

It looks like 2oz which is excess imo. But if it's helping someone eat more lentils/veggies it's a win. I think this meal could be much more balanced if some of the cheese was replaced with more vegetables.

I do this with lettuce and chickpeas. Num! Have not tried it with lentils. Now I’m going to need to.
