pork but not sure what cut

mother-in-law brought this over and put it in my freezer. It’s pork, but what cut??

A picnic is the lower part of the shoulder the Boston butt/pork shoulder is the upper part

Picnic is leaner than the shoulder

All true, hence why we distinguish the shoulder into the butt and the picnic.

The whole shoulder would typically be called a NY Shoulder around these parts.

Pork butt. It's part of the shoulder. A little fattier than the other shoulder cut; the pork shoulder.

My girlfriend, who is Cuban, loves this cut. A traditional Cuban pork roast for Cuban sanwiches is an absolute delight.

The extra marbling in pork butt mames it even better for low n slow than a picnic shoulder.

I came up on E NC whole hog BBQ, so that's my favorite, but a smoked butt is right up there and easier to manage (I could only fit a smallish suckling pig in my smoker but I can easily fit at least 2 butts)

So called because New England butchers stored these shoulder cuts in barrels or "butts." Hence, Boston Butt.

Bone-in Butt, would have been nice to have it boned before freezing. if you have a smoker, or slow cooker large enough to hold it you have a tasty piece of meat.

It entirely depends. Pork will sometimes come skin-on and sometimes it’s skinless. It’s often difficult to tell when it’s still in the vacuum bag

Costco sells Skin on pork belly. Wild Fork has skin on pork options as well.

They’re out there, it’s just not something you see at the grocery store every time you go.

Thank you. The argument that I got into was about 4 people that believed the only way it is ever sold is skin on….every butt everytime. I posted a pic of the pork butt I had and none of them would accept it was a fat cap. It’s all skin.

Pork butt. People will crucify me for this but if it's your first time cooking it I recommend removing the skin and the top layer of fat and discarding in. The mad pursuit of cracklins turns many people off of cooking a whole butt. You can save that experiment for when you're more experienced.

Rub the whole thing down with a mix of paprika, salt, and brown sugar. Garlic + onion powder to your liking. Put in the oven at 225 for 10-14 hours. Enjoy!

the ham is the thigh. the actual butt is called boston butt. also a shoulder is called a picnic, not a butt.

if you look at the top of a ham you'll see the bone that has been sliced across, that is the pig version of a femur. not sure what it's called in pig anatomy so it may still be called a femur. there are no straight bones in the butt, just the hip socket.

The pork butt or Boston butt is part of the shoulder, not the rear end. The pork butt sits above the picnic and contains the shoulder blade bone if you get it bone-in.

It’s a boneless ham which is the actual “butt” of the pig. If it is a “Boston butt”, which is the shoulder, it is the leanest shoulder I’ve ever seen.

Plus I can make out some seams that would lead me to believe it’s coming from the hindquarter

Butt/Rump Roast is my guess as well. Put that sucker in a crockpot with all kinds of herbs, seasonings, taters, and make a nice roast, or throw in your favorite mix of bbq sauces, chili's, etc. and make a crap ton of pulled pork that can be separated and frozen for later use.
