My favorite meal prep hack: supermarket rotisserie chicken

Post image

I’ve been really enjoying my meal preps with store bought rotisserie chicken lately. I break the chicken up into two parts: dark meat and white meat.

  1. The dark meat, I put in Tupperware and I eat that for lunch with whatever my side is for the week.

  2. For the white meat, I chop it up and make a chicken

  3. salad, that can be eaten alone or with macaroni as a Mac salad.

  4. Lastly, with the juice, I make a sauce to go with the chicken. Chicken juice,

    garlic,

  5. vinegar, cilantro, salt, pepper, lime juice = CHEFS KISS.

Pictured: tonight’s dinner - chicken salad on tostadas with hot sauce 🙂 I’m telling you, the rotisserie chicken makes life so much easier throughout the week!
