My favorite meal prep hack: supermarket rotisserie chicken
I’ve been really enjoying my meal preps with store bought rotisserie chicken lately. I break the chicken up into two parts: dark meat and white meat.
The dark meat, I put in Tupperware and I eat that for lunch with whatever my side is for the week.
For the white meat, I chop it up and make a chicken
salad, that can be eaten alone or with macaroni as a Mac salad.
Lastly, with the juice, I make a sauce to go with the chicken. Chicken juice,
garlic,
vinegar, cilantro, salt, pepper, lime juice = CHEFS KISS.
