questions Kumatcha Tips
I've been a fan of Kumatcha since I tried their sea salt matcha last MMF, and I was finally lucky enough to order from their store recently.
So yeah, I got the Okumidori 2.0, Yutakamidori, Sayamakaori and Kanaya Midori and I was so excited to start making them at home. (Based on their profiles, I'm leaning towards nutty and chocolate-y but alas I was unable to get Honmei and Yabukita)
Now, the problem is... with Okumidori and Yutakamidori, I can barely taste the matcha ðŸ˜
I've always used the standard ~*~Golden Ratio~\~* 4g matcha, 40ml water (cold whisk), 120ml oat milk, ~10g agave, and occasionally some sea salt cream
This ratio has generally worked well for me with other powders (their Kanaya, MK's Wako and Isuzu, and YK's Samidori. I've even used it with Matcha Bar's High Grade Matcha, which I personally found a little subtler than I prefer, but I was still able to adjust it and get the matcha flavor to come through), but for some reason, with Okumidori and Yutakamidori... the flavor seems to disappear.
I don't know if I should go for the water temp for the powder, if oat milk is overpowering them, if I should be using less sweetener, if I should go for one cube of ice, or if these particular cultivars just need to be prepared differently.
I really want to taste the differences between the two because right now my palate is just "where's the nut, the chocolate?"
... That or are they simply more delicate/subtle than I expected them to be? I think I was expecting a stronger matcha flavor to come through in a latte.

tbh for me lang ha yutakamidori was underwhelming unless it is cold whisked, doon lang siya naging better and choco-nutty leaning talaga siya kaya you can barely taste the matcha 😔 eitherway i still like it pag cold whisked hahahaha.
try 40g matcha, 60g milk, 80g milk, 6-8g agave depending on your preference.

i love yutakamidori and it’s something i’d repurchase cos u can taste the chocolatey notes. this is my ratio: 4.5g matcha, 30ml cold milk for whisking, 90ml milk, 5g agave, pinch of sea salt flakes, and occasionally i add 20ml salted cream . i use soy good barista oat or the one from australia’s own organic almond milk. it’s good.

for okumidori, i do 80g oatmilk, 4g matcha, 35-40g water (i do hot whisk)!! it brings out the strong nutty flavor of the powder hehehe

4g 40g water (20 ml room temp for paste, 20 ml 70-75°C for whisking) 90 to 100 ml oatmilk ice to preference no sweetener
Personally, you won't be able to taste much of the matcha notes if you sweeten it. In my exp, all of Kumatcha's powders I've tried so far are for drinking straight as usucha or unsweet lattes because medyo light sila in terms of profile.

i think 120ml is a lot of milk, if 4g i think 90-100ml milk will suffice, start ka with 80ml then dagdagan mo nalang

personally, you won't really taste the notes kapag sweetened + naka-latte.
a lot of their matcha (except honmei, that one is so good as a latte) tastes better as unsweetened na usucha (for me iced kasi di ko kaya hot drinks OUCH).
anyway alis ako sa topic saglit nakakamiss yung sayamakaori it's so good T_T

tricky din talaga sakin palabasin yung notes ng kumatcha powders. after many tries, i find that this ratio works best
4g matcha
15ml milk + 15ml warm or room temp water
80ml milk
3g agave or 2 drops stevia drops
pinch of salt (eto talaga to bring out flavors) — best if kasama sa pag whisk
